Tips:

For softer cookies, use quick-cooking oat flour.
You can replace the coconut oil with another neutral vegetable oil (sunflower, grapeseed, etc.).
Feel free to customize your cookies with your favorite inclusions.
Store the cookies in an airtight container at room temperature for 3-4 days.

Ingredients

  • Ingredients:

    • 1 cup oat flour

    • 1/2 cup whole wheat flour

    • 1/2 cup Momelle baobab powder

    • 1/2 cup coconut sugar (or other unrefined sugar)

    • 1/2 cup melted coconut oil

    • 1/4 cup unsweetened applesauce

    • 1 egg

    • 1 teaspoon vanilla extract

    • 1/2 teaspoon baking soda

    • 1/4 teaspoon salt

    • 1/2 cup dark chocolate chips (or other inclusions of your choice: nuts, seeds, dried fruits...)


Preparation

Instructions:

  1. Preheat your oven to 180°C. Line a baking sheet with baking paper.

  2. In a large bowl, mix the flours, baobab powder, sugar, baking soda and salt.

  3. In another bowl, whisk together melted coconut oil, applesauce, egg and vanilla extract.

  4. Pour the liquid ingredients into the dry ingredients and mix until you obtain a smooth dough.

  5. Stir in the chocolate chips (or other inclusions).

  6. Using a spoon, drop balls of dough onto the baking sheet, spacing them about 2 inches apart.

  7. Flatten the balls of dough slightly with the back of the spoon.

  8. Bake for 10-12 minutes, or until the edges of the cookies are lightly browned.

  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
